BJ's Buffalo Chicken Dip

INGREDIENTS:
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup red hot sauce
2 teaspoons Wildtree Buffalo Wing Marinade
8 ounces shredded Mexican blend cheese
2 cups shredded chicken
PREPARATION:
Mix cream cheese and sour cream until smooth. Add red hot sauce, Wildtree Buffalo Wing Marinade, and Mexican cheese; mix well. Add chicken and mix until well blended. Pour into slow cooker and heat on medium until hot or refrigerate and serve chilled.

Broiled Salmon with Smoky Espresso BBQ Sauce
Serves 4
1 pound salmon filet
2 tablespoons Espresso BBQ Sauce (see recipe below)
Preheat broiler. Lightly grease a baking dish. Place salmon in baking dish and brush with the Espresso BBQ Sauce. Broil 10-12 minutes or until fish is cooked through and flakey.

Busy Day Lasagna

INGREDIENTS:
1 (16 ounce) box mafalda or farfalle pasta (mini lasagna noodles or bow ties)
1 tablespoon Wildtree Natural Grapeseed Oil
1 pound lean ground beef
½ cup chopped yellow onion
1 (28 ounce) can low-sodium tomato sauce
1 tablespoon Wildtree Hearty Spaghetti Sauce Blend
2 (5 ounce) cans evaporated low-fat milk
8 ounces reduced-fat cream cheese, cubed
8 ounces part-skim mozzarella cheese, shredded
PREPARATION:
Preheat oven to 350 degrees F. Cook pasta according to package directions, drain, and set aside. In a large skillet, heat Grapeseed Oil over medium high heat. Brown ground beef with onion, drain off fat, and add tomato sauce and Spaghetti Blend. Simmer 10-15 minutes on low heat. In a small sauce pan, combine evaporated milk and cream cheese. Melt dairy products on medium heat. Add milk and cheese mixture to noodles; mix well. Arrange noodles in bottom of a 9x13 inch baking dish. Evenly spread meat sauce over noodles. Sprinkle with mozzarella cheese. Bake uncovered for 20-30 minutes, or until cheese is melted and lightly browned.
Dish may be made ahead of time and refrigerated. Increase baking time to 30-45 minutes, and cover with foil. Remove foil for last several minutes to melt cheese.
Serve with salad tossed in Wildtree Creamy Ranch Dressing Dip & Mix, and garlic cheesy bread.

Pasta Alfredo Extraordinaire
SERVINGS: 8
INGREDIENTS:
1 package Wildtree Alfredo Extraordinaire
1 cup milk
10 tablespoons butter
1 pound pasta, cooked al dente
PREPARATION:
In a small sauce pan, heat butter and milk together until the butter is melted. Whisk in Alfredo mix and bring to a simmer. Shut off heat. Toss alfredo sauce with pasta and add grated parmesan cheese if desired. Season with salt to taste.

Outrageous Orange Chicken
Serves 6
2 pounds boneless, skinless chicken, thinly sliced
Wildtree Natural Grapeseed Oil, for frying
1 large egg, lightly beaten
1/2 cup cornstarch, plus 2 tablespoons for slurry
1/2 cup water
1 teaspoon toasted sesame oil
½ - ¾ cup Wildtree Outrageous Orange Sauce
2 scallions, thinly sliced
Heat 2 inches of Grapeseed Oil to 375°F in a wok or deep skillet. Mix the egg, cornstarch, water, and sesame oil in a large bowl until smooth. Add the chicken and coat it well with the batter. When the oil is hot, cook the chicken pieces in batches until they are browned and crisp, about 4 to 5 minutes per batch. Drain on paper towels. When you have fried all of the chicken, transfer it to a large bowl. Add the Outrageous Orange Sauce and use tongs to toss chicken making sure it is evenly coated with the sauce. Garnish with scallions. Serve with steamed white rice.

Outrageous Orange Salmon
Serves 4
1 (1 pound) salmon fillet
½ cup Wildtree Outrageous Orange Sauce
Preheat oven to 375°F. Place the 1 pound salmon fillet on a foil lined sheet pan and baste with a thin layer of Outrageous Orange Sauce. Bake for 25 minutes, basting at 10 and 20 minutes. Flake with a fork to test for doneness.

Chicken Tacos

INGREDIENTS:
2 cups Wildtree Fiesta Salsa Mix, prepared to package directions
2 tablespoons Wildtree Jalapeno Blend
8 ounces sour cream, low fat or no fat
1 pound chicken breasts, boneless, sliced
1 tomato, diced
4 ounces cheddar cheese, shredded
2 tablespoons Wildtree Taco Seasoning
2 tablespoons Wildtree Natural Grapeseed Oil
12 tortilla shells, fat free
PREPARATION:
Combine sour cream and jalapeno blend. Place in refrigerator for two hours prior to use. In a medium skillet, heat oil over medium-high heat. Add taco seasoning and chicken and saute for about 5 to 7 minutes. Heat shells in microwave for about 45 seconds. Placed diced tomato, cooked taco chicken, cheese, and tortilla shells on a platter. Build tacos and top with jalapeno sour cream.
